| Ingredients:
75g/3oz watercress 115g/4oz smoked mackerel fillets, skinned 50g/2oz low fat soft cheese 30ml/2tbsp low fat natural yogurt 10ml/2tsp creamed horseradish fresh lemon juice, to taste seasoning
Method:
- Wash the watercress, pat dry and discard any coarse leaves or stalks.
- Place the watercress, mackerel, soft cheese, yogurt and horseradish in the blender and process until smooth.
- Add lemon juice and seasoning to taste.
- Spoon into a dish and chill for 1 - 2 hours before serving.
- Serve on a bed of salad leaves and wholemeal toast.
