Ingredients:
1 aubergine, sliced, salted and left for 30 mins 1 onion, peeled and chopped 2 carrots, peeled and thinly sliced 2 courgettes, sliced 4 tomatoes, quartered 50g/2oz butter 4 tuna steaks salt and pepper Topping: 80g/3oz wholemeal breadcrumbs 50g/2oz cheddar cheese, grated 1 cooking apple, peeled, cored and finely chopped
Method:
- Place the onions, carrots, courgettes, aubergine and tomatoes into a dish season.
- Dot with butter, then place the tuna steaks onto the top of the vegetables.
- Mix together the topping ingredients and spread evenly over the fish.
- Bake in a preheated oven at 180ºC/350ºF/Mark 4 for 60-75 mins.
- If using a fan oven, cook at 160ºC for 50-60 mins.
