Tuna harvest
           

Ingredients:

1 aubergine, sliced, salted and left for 30 mins
1 onion, peeled and chopped
2 carrots, peeled and thinly sliced
2 courgettes, sliced
4 tomatoes, quartered
50g/2oz butter
4 tuna steaks
salt and pepper
Topping:
80g/3oz wholemeal breadcrumbs
50g/2oz cheddar cheese, grated
1 cooking apple, peeled, cored and finely chopped

Method:

  1. Place the onions, carrots, courgettes, aubergine and tomatoes into a dish season.
  2. Dot with butter, then place the tuna steaks onto the top of the vegetables.
  3. Mix together the topping ingredients and spread evenly over the fish.
  4. Bake in a preheated oven at 180ºC/350ºF/Mark 4 for 60-75 mins.
  5. If using a fan oven, cook at 160ºC for 50-60 mins.
