Ingredients:

110g (4oz) Self raising flour
1/2 level teaspoon salt
3 tablespoons sunflower oil
3 to 4 tablespoons water
a little vegetable fat for frying a small chopped onion

Topping
Choose from tomatoes, mushrooms, cheese, peppers, sweetcorn and chopped mixed herbs etc - or add bacon or ham for a non-vegetarian option. The choice is yours!

Method:

  1. Mix together the flour, salt and 1 tablespoon of oil.
  2. Add enough water to make a fairly stiff but pliable dough.
  3. Knead until smooth, then roll out to an (18cm) 7 inch round
  4. Fry on one side in the remaining oil until golden brown
  5. Turn the dough over and cover with the chosen toppings using the onion fried in a little vegetable fat as a base.
  6. Cover with your choice of topping and finish with cheese as desired. The underside should be golden by this time.
  7. Place under a hot grill until the cheese is golden and bubbling. Alternatively, roast vegetables on a ridged griddle pan and top with Feta cheese and freshly chopped mixed herbs and eat immediately.
  8. Serve with a mixed green salad
