Method:
- Sieve the flour, salt and cayenne pepper together
- Stir in the spring onions and sage leaves and two-thirds of the cheese
- Peel the potato and coarsely grate into the mixture. Blend together.
- Mix together egg, milk and mustard, pour into the mixture, form a rough dough.
- Place onto a greased baking tray and form into a 15cm/6 inch round.
- Press the remaining feta cheese over the surface & dust with flour.
- Bake at 190°C, 375°F, gas 5, fan oven 170°C for 35 - 50 mins until it is golden brown.
- Serve slightly warm.
