Citrus iced tea

This is a cross between an american iced tea and a moroccan mint tea, wonderfully refreshing in hot weather.

To make it into a more interesting punch add dark rum and soda

Citrus Iced Tea
Ingredients:

6 fruit teabags
6 large sprigs of mint
60 ml (4 tablespoons) honey
2 pints boiling water
zest and juice of 2 large oranges
zest and juice of 1 lemon
zest and juice of 2 limes

To serve
Crushed ice
Mint sprigs

Method:

  1. Place the teabags; mint and honey in a large bowl and pour over boiling water.
  2. Leave to infuse for 10 mins, squeeze and remove teabags and leave mixture to go cold.
  3. Stir in juice of orange, lemon and limes, then strain. Stir in zest of oranges, lemon and limes.
  4. Pour into glasses and add ice and fresh mint to serve.
