| Ingredients:
115g/4oz butter 80g /3oz caster sugar 1 egg, separated 200g/7oz plain flour pinch of salt 2.5ml/½tsp mixed spice 2.5ml/½tsp cinnamon 50g/2oz currants 25g/1oz chopped mixed peel 15-30ml/1-2tbsp milk a little caster sugar
Method:
- Cream together the butter and sugar beat in the egg yolk.
- Sift together flour, salt and spices. Fold into creamed mixture with currants and peel.
- Add enough milk to give a soft dough.
- Knead lightly on a floured surface and roll out to ¼ inch thick. Cut out using 2½ inch /6 cm fluted cutter.
- Place on greased baking trays.
- Bake:
Fan oven 175ºC 10 minutes Conventional oven: preheated 200ºC 10 minutes Gas oven: preheated Mark 6 10 minutes
- Then brush with egg white and sprinkle with caster sugar.
- Return to oven for a further 10-15 minutes.
- Remove from oven and place on a cooling rack.
