| Ingredients:
750g/1lb 11oz dried mixed fruit - currants, sultanas, raisins, glace cherries, peel 125ml/5 fl.oz cranberry juice 175g/6oz self raising flour 1 egg 400g/14oz can sweetened condensed milk
Method:
- Line base and sides of a deep 20cm/8inch deep round cake tin with 3 layers of greaseproof paper.
- Place fruit and cranberry juice in a large saucepan, bring to the boil remove from heat.
- Cool to room temperature.
- Preheat oven to Gas 2, 150 oC, 300 oF.
- Place fruit and juice mixture in a bowl, stir in remaining ingredients.
- Bake for about 2 hrs.
- Cover hot cake tightly with foil and allow cake to cool in the tin.
