Condensed milk fruit cake
   
Ingredients:

750g/1lb 11oz dried mixed fruit - currants, sultanas, raisins, glace cherries, peel
125ml/5 fl.oz cranberry juice
175g/6oz self raising flour
1 egg
400g/14oz can sweetened condensed milk

Method:

  1. Line base and sides of a deep 20cm/8inch deep round cake tin with 3 layers of greaseproof paper.
  2. Place fruit and cranberry juice in a large saucepan, bring to the boil remove from heat.
  3. Cool to room temperature.
  4. Preheat oven to Gas 2, 150 oC, 300 oF.
  5. Place fruit and juice mixture in a bowl, stir in remaining ingredients.
  6. Bake for about 2 hrs.
  7. Cover hot cake tightly with foil and allow cake to cool in the tin.
