Caramelised Clementines
  
Ingredients:

50g/2oz granulated sugar
75ml/5tbsp water
60ml/4tbsp orange juice
2 clementines, peeled

Method:

  1. Place sugar and water in a small pan.
  2. Dissolve the sugar gently, stirring continuously.
  3. Bring to the boil without stirring until the mixture caramelises to a medium brown colour.
  4. Remove from the heat and gradually add the orange juice (take care as it does tend to spit at this stage).
  5. Return to a gentle heat and allow mixture to dissolve. Allow to cool.
  6. Place clementines in serving dish and pour over caramel sauce. Allow to marinate for 1-2 hrs before serving.
